Job purpose:
Responsible for implementing and maintaining control systems for sales and costs. Supervises Receiving and Storage Department. Assists Food & Beverage Director with pricing, testing and menu planning. Maintains professionalism. Oversees all activities involved in obtaining materials
at minimum costs. To analyze the supply, demand, and prices and to assess the local events as they affect materials. To develop the purchasing policies, procedures, and plans.
Technical responsibilities::
- Responsible for month-end inventory of storerooms and F&B outlets.
- Coordinates daily physical bar inventory and ensures all counts are correct.
- Responsible for “surprise” spot checks for all F&B outlets and storeroom.
- Coordinates the “Divi purchasing by container” program.
- Collaborates with F&B Director to ensure recipe costing and menu costing are within required margins.
- Ensures operations / front of the house are portioning as per menu and as per optimal cost controls.
- Provides correct expense figures as requested, to be given to department heads.
- Ensures the accurate recording of all sundry and consumable goods purchased, accuracy of POS menu prices.
- Prepares and provides daily and weekly food & beverage cost report.
- Monitors daily the input of stock movement on cost basis (purchasing, receiving, issuing, transfers) into computer system. Check to ensure that no materials are issued from the store without requisition and approval from the department head.
- Analyzes Food & Beverage cost weekly.
- Responsible for ensuring POS and PMS systems reconcile.
- Prepares timetable and stock sheets for regular inventories and coordinates timely counting and evaluation.
- Approves invoices and statements for purchase prices as detailed form purchasing.
- Ensures the work area is clean and well organized.
- Maintains correct security procedures according to hotel policy.
- Reports any health or safety hazards to the Financial Controller or General Manager.
- Performs any other duties that may be required by the Financial Controller or General Manager.
Administrative responsibilities:
- Reports to workstation according to the schedule with a high standard of personal appearance and hygiene as described in employee handbook.
- Ensures all financial transactions are recorded with accepted - and established accounting principles and procedures.
- Demonstrates master proficiency of Optimum Control / Tracrite Software and reports.
- Attends employee and training sessions as directed by the Financial Controller / General Manager.
Experience:
- At least 3 years’ experience at the same role with an up-scale (4/5 Star) hospitality environment.
Education:
- Bachelor of Commerce or Similar or 4-year bachelor's degree in Finance and Accounting or similar major.
Skills:
- Good verbal and written communication skills.
- Good analytics and reporting skills.
- Experience with Accounting System, POS Systems and cost and inventory systems.
- Ability to multitask, work in a fast-paced environment.
- Have a high-level attention to detail.
- Ability to work independently and to partner with others to promote an environment of teamwork.
Other:
- Dutch or US passport holder.
